Abstract: A course manual for providing nutrition education and training to the elderly is designed around the use of elderly nutrition aides, trained by registered program dietitians to teach nutrition to their peers. The manual also may be used for conducting nutrition education classes by persons with some formal nutrition training. The curriculum is intentionally simple and repetitive to ensure that nutritional concepts are easily understandable and are learned. The course curriculum covers 44 consecutive daily lessons, ranging from the Basic 4 food groups, nutrition labeling, and economical food purchasing, to menu planning, cooking for 1-2 people, convenience foods, food stamps, and food storage.
